One of the perks of volunteering at Olivewood Gardens is that the property is just a freeway exit away from one of my favorite local markets, Northgate Gonzalez. So, I often stop off on my way home from a day of teaching cooking to the kids. And what did I find at my last stop? Well, a few things, but today I’ll mention just one: nopal tortillas. Northgate has their own tortilleria and I’ve long enjoyed their traditional corn tortillas, chips, and sopes, but a friend I was with picked up a bag of green tortillas—months after St. Patrick’s Day—and we were both stumped until we saw that they were made with nopal (cactus). Even better was the taste we got from a cart in the take-out section. A cactus tortilla filled with pork and pico de gallo is a wonderful thing. The tortillas themselves are slightly sweet and a little lighter in texture than regular corn tortillas. I bought a package of 36 and am now down to my last dozen—they’re that good.
