Ernest Hemingway—whose birth and death fall in July—immortalized his two favorite Havana bars thusly: "Mi mojito en La Bodeguita, mi daiquiri en El Floridita." Today, fans flock to Cuba to drink his beloved drinks in his go-to watering holes. The writer’s spirit also looms (though not quite as large) at downtown’s Bice, which adds the Hemingway Daiquiri to its "endangered cocktails" list this summer. A far cry from the super-sweet blended monstrosity known to Cabo spring-breakers, this version is simple and strong. Bartenders muddle raw sugar with lime juice, mix with Bacardi 8 aged rum, and serve over ice for $12. "It’s very stiff," warns bar manager Brian "The Muddler" McFarland. Something tells us Papa would approve. Bice, 619-239-2423.
