Very Important Taco: Tacos El Cabrón’s Namesake Taco

It pairs carne asada with pinto beans in a street taco-size tortilla

There’s a tricky middle ground that many restaurants in urban areas want to hit—jazzy enough to draw in nighttime revelers, but not so jarring that a daytime worker doesn’t want to drop in. That’s the vibe Tacos el Cabrón aimed to create when they debuted in the Gaslamp last fall.

“We wanted to serve people who work downtown as well as people who go out—and the only option they had late night was pizza. We saw a need for authentic Mexican food,” says operator Jean-Paul Rojo, who grew up in Mexico City.

Their menu’s got tacos—with or without grilled cheese—burritos, birria, and drinks like aguas frescas and Mexican beers. The highlight is their namesake taco. A house-made flour tortilla is filled with carne asada, whole pinto beans, chopped onions, and cilantro, plus guacamole made fresh daily. And night owls rejoice: They’re open until 3 a.m. on Fridays and Saturdays.
