When Rey Knight closed his Knight Salumi last year, he didn’t stop fermenting stuff. His Butchers Brewing and Mucho Aloha beers have taken off, served in a couple hundred SD outlets and retailers like Sprouts and Whole Foods. Knight just struck a deal with a distributor in Chicago, and now he’s close to inking a deal to acquire a brewery in San Diego for a tasting room and production facility. "I’m close," he says. "Hopefully we’ll be up and running with the San Diego location by February." He’s also in talks to get back into the salumi game near the end of 2013, finalizing a production facility up in Berkeley.

Meanwhile, former Pizza Port head brewer Jeff Bagby has inked the deal for his long-awaited new Bagby Beer emporium. He just leased a massive space at 601 S. Coast Highway in Oceanside—an 11,000 square-foot spot that formerly held a car dealership (Continental Motors).
