Meet healthy food blogger Lindsey Levine

When Weeknight Bite went live, San Diego native Lindsey Levine was shocked that 2,000 people logged on the first day. After all, she had created the healthy cooking blog herself on weebly.com, and all the recipes were based on her mom’s cooking. “There’s something about cooking simply and healthfully that’s resonating with people right now,” she says. It all started when Levine’s mom sent her off to USC with a stack of handwritten recipe cards. She cooked for friends and roommates, and even filmed a few how-tos to send to her younger brother. After graduation, friends were emailing for cooking tips. So as a side project, while holding down a responsible job in insurance, Levine created the blog. “I thought if the only people that logged on to read it were my friends and family, then that’s great,” she says. Turns out it’s more than college roomies. More than 1,000 people visit the blog daily, and Levine now focuses on the blog full-time, and is working toward a professional chef certification. “I’m going to add cooking classes and a lunch delivery service soon,” she says.
