Warm Butternut Squash & Crispy Bacon Salad
Crispy bacon, squash that's been lightly browned and dressing with a little maple in it all matched with a great blend of seasonal greens. If this doesn't say fall, you're from Mars. - Sam the Cooking Guy
1 tablespoon maple syrup
2 teaspoons red wine vinegar
2 tablespoons olive oil
Kosher salt and fresh ground pepper
2 cups butternut squash, cut into a ½ inch dice
2 teaspoons butter
1 ounce Ready Bacon, sliced thin
One 4 ounce bag, Fresh Express Artisanal Salad- Harvest Moon Splendor
- Combine syrup, vinegar and oil - whisk well, and season with salt and pepper - set aside
- Put squash on a plate, cover with plastic wrap and microwave about 60 seconds
- Heat non-stick pan and add squash and butter and cook until squash just begins to brown - then add bacon
- Cook until bacon gets crispy - about 2 minutes - remove from heat
- Toss salad with some of the dressing, then plate
- Top salad with squash/bacon combo and add a few grinds of pepper - serve
