Wild Rocket and Prosciutto Salad
Serves 3-4 as an appetizer
Salad
1 4oz Bag Fresh Express Artisanal Wild Rocket Zest
½ cup rinsed canned cannellini beans (white kidney beans)
¼ cup prosciutto sliced into thin strips
¼ cup diced red bell pepper
¼ fennel bulb very thinly sliced
Dressing:
½ small shallot minced
1 TB sherry or white wine vinegar
2 TB olive oil
½ tsp Dijon mustard
salt and pepper to taste
¼ cup shaved parmesan cheese
Instructions:
Prepare dressing and reserve
Toss all salad ingredients together with dressing, top with parmesan cheese
