Thanksgiving Alfresco

Host a SoCal-style gourmet celebration outside

Published:

San Diego Thanksgivings are often warm and mild, which means we can entertain family and friends outside. Create your own open-air living room environment—even better if your patio is on the beach.

Make it: Citrus-Glazed Cornish Game Hens

» 4 hens
» ½ an orange (quartered) per hen
» ¼ cup orange marmalade
» 1 tbsp. Worcestershire sauce
» 2 tbsp. butter

Preheat your oven to 350°.

Line a baking sheet with foil and spray with non-stick spray.

For the glaze, melt the marmalade and Worcestershire sauce in a pan—
do not boil. Drizzle the mixture on all sides of the hens and stuff 2 slices of an orange in each.

Reserve about half the glaze. Place hens breast-side up. Bake uncovered for 45 minutes.

Use the rest of the glaze to baste and cook for an additional 15 minutes.

When inserted, poultry thermometer should reach 180°.

Let rest 10 minutes, and serve.
