Just outside Cologna is the four-diamond, Swarovski family-owned Sparkling Hill Resort, whose spa offers the first North American cryotherapy cold sauna as a health treatment (multiple sessions can benefit arthritis and other ailments). An attendant guides groups of four through three chambers of descending temperatures, starting at 5° F and ending at -110° F. In the last room, you walk in a circle, listen to music, encourage each other, and focus on keeping your muscles relaxed. Unlike hot saunas, there is no bench for sitting—you need to move. Sofitel’s Estérel Restaurant is debuting a De-Light Menu, which makes it possible to dine on three courses and still stay under 500 calories. Customer favorites include the sea bass escabeche, which clocks in at just 112 calories, and the gluten-free linguini with basil ratatouille and local burratta, at 206 calories. All bets are off with the alcohol, but the bartender does mix the best green-colored cocktail we’ve ever tasted: The Byblos is made with Ketel One or Hendricks Gin, local wild arugula, and pressed lime juice agave.
