This bone-dry Champagne has very fine persistent bubbles and flavors of sour cherries, raspberries, pie crust, and almonds. And it’s pink! 3For adventurous types who prefer red wines to bubbles, go with The Black Chook Sparkling Shiraz from Australia. A dry Shiraz made sparkling with flavors and textures from both the Shiraz grape and the bubbles, it’s a good compromise if you want bubbles and red wine in one. It is bold, not shy, and features black fruits, Graham cracker-crust notes, and a full body. Try it with dark chocolate or a box of truffles.
